For us, it goes without saying that the ingredients for our dishes mostly come from farms that work with natural methods. Our stance is that the Weiße Rauchfangkehrer has a proverbial clean slate when it comes to procuring food. One of the reasons we buy from sustainable companies is because the product quality is unrivalled – you can really taste it.
Two examples: The meat we use is sourced from cattle raised as suckler cows. The eggs come from happy chickens that are allowed to scratch around in orchards as they please. We have equally high standards for fish, vegetables, fruit, cheese, bread and wine – and work with selected suppliers who deliver fresh produce almost every day from the regions around Vienna, usually without long transport routes.
